Here's a quick and easy meal that's becoming a favorite at our house. My husband doesn't miss the meat, and we find it to be very filling.
For 1 serving:
Toss 1/4 cup shredded lettuce, 1/4 cup cooked garbanzo beans, 2 Tablespoons chopped cucumber, 2 Tablespoons chopped tomato, 1 oz (1/4 cup) reduced-fat feta cheese, 1 Tablespoon sunflower seeds, 4 large olives, 1 teaspoon olive oil, and 1 teaspoon vinegar. Stuff into 1 (2 oz) whole wheat pita.
For two of us, I just double the quantities and mix it all in one bowl. Then slice the pitas in half and stuff.
We just had this again recently, and it was SO delicious! However, we had a quick supper...and we were hungry!...so I forgot to take a photo of the finished sandwiches again. Sorry!
This recipe is from the Curves "Fitness and Weight Management Plan" book. They don't include calorie counts, but 1 serving of this recipe (1 whole pita, cut in half and stuffed) is about 400 calories. Very filling and high in fiber.

This sounds really good. Eric might take some convincing though...he's not a big fan of olives...but maybe I'll make them anyway.

Good idea for lunch today! I've got all the ingredients on hand...except I think I'll swap out the lettuce for spinach and use soy cheese shreds. Thanks for the inspiration!
PS..we made pita sandwiches this weekend stuffed with hummus, roasted red peppers, and greens. Also quite yummy!

are canned garbanzo beans the same as cooked garbanzo beans? This looks incredible and it might just be on the menu for a saturday picnic!
I'm sure they're the same, and if you're cooking them yourself, they will be even more delicious! Yes, I think it work well for an easy picnic menu.
dear friends ,i would like to give you an altrnative recipe about greek pita-we usually stuff it with choppe d tomatoes,onion, tzatziki(yogurt plus chopped cucumber,plus a little olive oil plus a little vinegar)with or without small cubes of roast pork.try it -it s delicious!!!!!

Thank you Sofia - that DOES sound good, and I'm sure it's more authentic! I've always wondered how to make the yogurt sauce...I'll give it a try!
google tzatziki and you will find recipe for sure,in english!dont forget the garlic also(i forgot it whn i wrote my comment yesterday!)
