Zucchini Invasion

Question: What do you do with a 22-inch zucchini?

Answer: Try out some new zucchini recipes, of course!

Here are some delicious new recipes we tried out this week.

Here is a delicious Summer Squash Casserole we enjoyed on Sunday. Yum! It was a quick, easy side dish. Just 234 calories / serving (3/4 cup). I borrowed this photo from the link - we ate it so quickly that we didn't get a photo!!

This Zucchini Pizza Casserole was another big hit. The preparation was a little more involved, but it was a delicious main dish. I cut back on the cheese a little bit. Another plus for this recipe is that it's a gluten-free way to enjoy the flavor of pizza.

You make it in 2 steps. 

First you make a base that is almost like a simple souffle. It bakes for 20 minutes.
Then you add the hamburger, cheese, and green peppers (also from our garden!) and bake for another 20 minutes. You end up with this delicious serving on your plate:
This 1-cup serving is 311 calories - not bad for a main dish serving!

And 22 inches! That is how long my baby was when he was born!
